About this cocktail
The Daiquiri is the most under-appreciated drink in the canon. White rum, fresh lime, simple syrup. Three ingredients, no bitters, no garnish, nothing to hide behind. The version most bartenders pour today traces to the 1898 mining town of Daiquirí in eastern Cuba, where American engineer Jennings Cox combined rum, lime, and sugar after running out of gin. As a freezer batch the rum's character comes forward and the lime stays bright for about a week. Use a quality white rum (Plantation 3 Stars or Probitas are reliable picks) and squeeze the limes within hours of batching.
